Easy Copycat KFC’s Famous Bowl

Start of the busy week calls for an easy night’s meal. I made these copycat KFC’s Famous Bowl and they did not disappoint.

It was actually my first time making them and couldn’t believe what I was missing out on.

The secret to the delicious bowls was how I made the chicken. I made double so we can have it throughout the week as well.

How to make the chicken cutlets:

  • 1 cup light mayonnaise
  • 1/2 cup shredded Parmesan cheese
  • 2 lbs boneless skinless chicken breast cutlets (we are a dark meat family so we did 2 lbs of boneless chicken thighs)
  • 1 cup Italian seasoned dry bread crumbs (add more if needed.)

Directions:

Preheat oven to 425 degrees Fahrenheit. Mix breadcrumbs and Parmesan cheese together in a bowl and set aside. In another bowl add mayonnaise.

Lightly grease baking pan and pound your chicken. Spread Mayo on one side of the chicken and dip chicken in breadcrumb mixture. Once fully coated spread repeat on the other side of the chicken.

Bake chicken for about 20-25 minutes.

Now that you have your chicken, he is the easy part.

KFC copycat Famous Bowl:

  • 1 package of instant mashed potatoes
  • 1 can sweet corn
  • 1 jar of chicken gravy
  • 1 bag of cheddar shredded cheese

Make mashed potatoes according to package directions and heat up both corn and gravy.

Add mashed potatoes first into your bowl. Cut up your chicken into large cubes and add on top of potatoes. Next add your corn and cheese and top with loads of gravy.

Mother’s Day is this weekend and I am looking forward to hanging with my family and enjoying some sunshine outside. 

What’s a relaxing day without a delicious drink? This Rosemary lemon blueberry spritzer is refreshing and the perfect choice to have this weekend and the rest of the summer.

The best part is you can enjoy this cocktail with or without alcohol and still enjoy the same taste.

Here is the recipe for the cocktail, you will need:

8-10 blueberries
1 oz fresh lemon juice
1 tbs agave
3 oz dry white wine
3 oz tonic water
1-2 sprigs of Rosemary

Mix blueberries, rosemary sprig and agave into a cocktail shaker. Muddle for about 30 seconds.

Add lemon juice and strain into glass.

Pour wine and tonic water and stir. Add additional blueberries and rosemary.

Here is what you need if you would like it as a mocktail:

6 oz of seltzer
2 Rosemary sprigs

3 Delicious Ways to Eat Baked Oats

Some mornings may feel slow, but they are always busy and most likely jam packed. We all know breakfast is the most important meal of the day, but that time frame will disappear as soon as you realize that you should eat.

Since working remote I discovered how to make the trending baked oats and I am so glad I did! It started with one recipe and from there I couldn’t stop experimenting. It is filling and so delicious even Franco enjoyed it.

Here are three delicious ways that I enjoy my baked oats.

Chocolate Chip Banana Bread Baked Oats

This is my favorite baked oats recipe since I am a huge lover of banana bread. Here is what you need:

  • 1 Mashed Banana
  • 2 Eggs
  • 1/2 cup Oats
  • 1 tsp Baking powder
  • 1/4 tsp Cinnamon
  • 1/8 tsp Salt
  • Chocolate Chips
  • Almond Slivers and Pumpkin Seeds (optional)

Preheat over to 350 degrees F and add all ingredients except chocolate chips, almond slivers and pumpkins seeds into a food processor and mix until everything is blended well. Pour batter into a greased miniature crock and mix in chocolate chips. Top with almond slivers and pumpkin seeds and bake for 30 minutes.

Chocolate Almond Butter Baked Oats

This baked oats is for the chocolate lovers. Here is what you need:

  • 1 Mashed Banana
  • 2 Eggs
  • 1/2 cup Oats
  • 1 tsp Baking powder
  • 1 tbs cocoa powder
  • 1/8 tsp Salt
  • 1 tablespoon almond butter
  • chocolate chips

Preheat over to 350 degrees F and add all ingredients except chocolate chips and almond butter into a food processor and mix until everything is blended well. Pour half batter into a greased miniature crock spoon almond butter in the middle of the batter. Add the rest of the batter on top and sprinkle with chocolate chips. Bake for 30 minutes.

Strawberries and Cream Baked Oats

Another delicious baked oats! Check out this delicious recipe:


• 1/2 cup flour
• 1/4 cup oats
• 2 tbs vanilla Greek yogurt
• 1/2 tsp baking powder
• 1 tsp vanilla extract
• 2 tbs sweetener
• 1/2 cup oat milk
• 1 tbs strawberry preserves
• Sliced strawberries

Preheat oven to 375. Combine all ingredients into a food processor except preserves. Put half the batter in a greased miniature crock.
Add preserves in the middle of batter and pour the rest on top. Bake for 30 minutes. Top with strawberries and pour cold milk on top.

Delicious Matzo Ball Soup

Passover is quickly approaching and I am excited because that I mean I get to have one of my favorite dishes- Matzo ball soup!

I was introduced to this soup after I married Dan. He makes it every Passover and whenever we are sick. His chicken stock aka Jewish Penicillin is key to making this soup taste amazing. 

I am sharing Dan’s recipe because I know you will all love it, even if you don’t celebrate Passover.

Ingredients

Chicken Stock

2 lbs of bone in chicken thighs

3 whole carrots

3 pieces of celery, whole

3 leek stems

2 whole turnips

3 whole parsnips

3 whole yellow onion

1 handful of parsley

1 handful of dill

1 tbs salt

Cracked black pepper to taste

1 box Matzo Ball Mix (prefer Manishewitz)

2 eggs

1/4 cup vegetable oil

Directions

Salt chicken and add carrots, celery, leeks, turnip, onion, parsley and salt in a large stock pot. Fill with water and bring to a boil.

Let us boil for 30 minutes and reduce heat to a simmer for about 2-3 hours.

Strain stock and put chicken and vegetables in a separate bowl, put to the side.

Bring just the broth to a rolling boil for about 10 minutes.

Prepare matzo balls according to package directions. 

Pour hot chicken broth into a bowl and add matzo balls, add desired chicken and vegetables into soup. Crack black pepper to taste.

Spring is in the air and there is nothing better than a warm delicious bowl of matzo bowl soup to celebrate the holidays or to get rid of the sniffles.

Hot chocolate is the theme this winter and who can be mad at that?

We can only have so many hot cocoa bars, hot cocoa bombs and traditional hot cocoas that I wanted to think outside the box.

Since this has been a mild winter in Upstate New York, I whipped up these easy frozen hot cocoa pops. They are the perfect treat to have after a day of playing outside or taking a break from virtual learning. If you are from a place with warmer climate, these pops are for you and your little ones!

It only requires two ingredients and the best part is I got them both at my favorite place, Dollar Tree!

All you need is chocolate pudding cups and mini marshmallows.

If you are at Dollar Tree, you can also grab what you need to make the pops. Grab an ice cube tray and popsicle sticks found in the craft area.

You can also use popsicle molds like I used here.

Fill molds with marshmallows and fill with chocolate pudding. Freeze for about 2 hours and enjoy!

All you need is

  • Fresh romain lettuce
  • Marinated mozzarella balls
  • Cherry tomatoes
  • Olive oil
  • Balsamic vinegar
  • Salt and pepper

On a large round serving plate, arrange lettuce into an ‘O’ shape circle.

Every place mozzarella and tomatoes all over lettuce.

Drizzle olive oil and balsamic vinegar all over and sprinkle with salt and pepper.

You can also put the oil and vinegar on the side by mixing it in a small bowl and placing it in the center of the wreath.
