3 Easy and Delicious Ice Cream Sandwiches That Will Make You Happy

It is National Ice Cream Day and what a fun day to celebrate! I don’t know about you, but ice cream makes me so happy. I don’t think I ever met anyone who didn’t like ice cream. There are so many ways to eat ice cream, but my favorite is an ice cream sandwich. I am sharing 3 easy and delicious ice cream sandwiches that will make you happy. The vibrant colors with a sweet and crunchy taste will be a hit with children and adults.

1. Easy and Delicious Chocolate Samoas Ice Cream Sandwich

These cookies are one of my absolute favorites. I loaded them withe chocolate ice cream and let the sandwiches settle for a few minutes in the freezer. This will help make the sandwiches less messy, but that really doesn’t matter!

2. Easy and Delicious Vanilla Chocolate Chip Cookie Sandwich

My favorite chocolate chip cookies are Chips Ahoy, so that is what I used. Any type of vanilla ice cream will do. Assemble your sandwiches and have them settle in the freezer for a few minutes, this will give them the perfect texture. This easy and delicious ice cream sandwich is Dan’s go to, he is always asking me to make them.

3. Easy and Delicious Oreo Strawberry Sorbet Sandwich

Remove the cream from the Oreo and replace with strawberry sorbet or flavor of your choice. Roll in some fancy sprinkles and settle for a few minutes in the freezer, this will make the sprinkles extra crunchy. This ice cream sandwich was Franco’s favorite choice and was sure to put a smile on his face.

Like I said, these 3 easy and delicious ice cream sandwiches will make you happy but there are so many ways and varieties to make your ideal ice cream sandwich! Since it is National Ice Cream day, I found so many ideas and curated my vision to my family’s liking. Ice cream sandwiches are the best because you can choose any cookie and any ice cream flavor of your choice, so the possibilities are endless!

Delicious Nutella Cheesecake Hand Pies

I’ve been on a serious Nutella kick lately. I can’t be without a jar in the house and no drop goes to waste.

If you’ve seen my post on Instagram, I showed you how to make Nutella chocolate milk with a fun printable label to put on the jar.

There are so many Nutella recipes to choose from I decided to search for some and get inspired to make my own. With ingredients that I already had in my kitchen I decided to make these delicious Nutella cheesecake hand pies.

This Nutella recipe is a fun snack that is filled with creamy whipped Nutella filling wrapped with a golden flaky crust. The hazelnut drizzle adds the perfect amount of sweetness.

Here is what you need:

  • 1 package refrigerated pie crust (comes with 2 crusts)
  • 4 oz package cream cheese
  • 1/2 cup Nutella
  • 1/4 cup Nutella
  • 1 egg
  • 2 tsp water

Directions

  1. In a stand mixer, mix 1/2 cup Nutella and cream cheese until combined.2.Place both pie crusts on top of each other.
  2. Using a glass cup or circle cookie cutter, cut out circles through each crust. Delicately take about the two circles.
  3. Take a full dollop of the Nutella cream cheese mixture into the center of half of the pie circles. Take the other half of the pie circles and place on top of the filling.
  4. Press all around the pie with your finger until sealed. Use a fork to complete the sealing by pressing all around the finger presses.
  5. Poke a few holes in each pie.
  6. Mix egg with water to create an egg wash. Spread it over each hand pie.
  7. Bake for 15 minutes at 350 degrees F.
  8. Heat the rest of the Nutella up in the microwave for about 45-60 seconds.
  9. Pour warm Nutella into a zip-lock bag and cut off a small piece of one of the bottom corners to make it into a piping bag.
  10. Drizzle Nutella all over the hand pies and enjoy!

Every year around this time our neighbors cherry tree blooms. The cherries are ripe and the most beautiful color red.

We always pick a bunch and make something yummy with them. I have previously shared how to make cherry pie filling, pull apart cherry pie and cherry pop tarts.

Today I am sharing a summer delight. No bake cherry cheesecake. It is perfect for those hot days so you do not have to turn the oven on. The cool and fresh taste is the ultimate treat on a summer day.

We used my homemade cherry pie filling but you can just use a can and it is just as good!

Ingredients

  • Pre made graham cracker crust
  • 4 cups of cherry pie filling
  • 8 oz cream cheese
  • 14 ounces of sweetened condensed milk
  • 1/4 cup lemon juice
  • 1/2 tbs vanilla extract

Directions

  • Mix cream cheese in blender until smooth.
  • Add vanilla, condensed milk and lemon juice and mix together.
  • Pour and spread cream cheese filling into pie crust spread evenly.
  • Top with cherry filling and refrigerate until cold.

Easy Copycat KFC’s Famous Bowl

Start of the busy week calls for an easy night’s meal. I made these copycat KFC’s Famous Bowl and they did not disappoint.

It was actually my first time making them and couldn’t believe what I was missing out on.

The secret to the delicious bowls was how I made the chicken. I made double so we can have it throughout the week as well.

How to make the chicken cutlets:

  • 1 cup light mayonnaise
  • 1/2 cup shredded Parmesan cheese
  • 2 lbs boneless skinless chicken breast cutlets (we are a dark meat family so we did 2 lbs of boneless chicken thighs)
  • 1 cup Italian seasoned dry bread crumbs (add more if needed.)

Directions:

Preheat oven to 425 degrees Fahrenheit. Mix breadcrumbs and Parmesan cheese together in a bowl and set aside. In another bowl add mayonnaise.

Lightly grease baking pan and pound your chicken. Spread Mayo on one side of the chicken and dip chicken in breadcrumb mixture. Once fully coated spread repeat on the other side of the chicken.

Bake chicken for about 20-25 minutes.

Now that you have your chicken, he is the easy part.

KFC copycat Famous Bowl:

  • 1 package of instant mashed potatoes
  • 1 can sweet corn
  • 1 jar of chicken gravy
  • 1 bag of cheddar shredded cheese

Make mashed potatoes according to package directions and heat up both corn and gravy.

Add mashed potatoes first into your bowl. Cut up your chicken into large cubes and add on top of potatoes. Next add your corn and cheese and top with loads of gravy.

Mother’s Day is this weekend and I am looking forward to hanging with my family and enjoying some sunshine outside. 

What’s a relaxing day without a delicious drink? This Rosemary lemon blueberry spritzer is refreshing and the perfect choice to have this weekend and the rest of the summer.

The best part is you can enjoy this cocktail with or without alcohol and still enjoy the same taste.

Here is the recipe for the cocktail, you will need:

8-10 blueberries
1 oz fresh lemon juice
1 tbs agave
3 oz dry white wine
3 oz tonic water
1-2 sprigs of Rosemary

Mix blueberries, rosemary sprig and agave into a cocktail shaker. Muddle for about 30 seconds.

Add lemon juice and strain into glass.

Pour wine and tonic water and stir. Add additional blueberries and rosemary.

Here is what you need if you would like it as a mocktail:

8-10 fresh blueberries
1 tablespoon of agave
1 ounce of fresh lemon juice
6 oz of seltzer
2 Rosemary sprigs

Mix blueberries, 1 rosemary sprig and agave into a cocktail shaker. Muddle for about 30 seconds.

Add lemon juice and strain into glass.

Pour in seltzer and stir. Add additional blueberries and rosemary sprig.

3 Delicious Ways to Eat Baked Oats

Some mornings may feel slow, but they are always busy and most likely jam packed. We all know breakfast is the most important meal of the day, but that time frame will disappear as soon as you realize that you should eat.

Since working remote I discovered how to make the trending baked oats and I am so glad I did! It started with one recipe and from there I couldn’t stop experimenting. It is filling and so delicious even Franco enjoyed it.

Here are three delicious ways that I enjoy my baked oats.

Chocolate Chip Banana Bread Baked Oats

This is my favorite baked oats recipe since I am a huge lover of banana bread. Here is what you need:

  • 1 Mashed Banana
  • 2 Eggs
  • 1/2 cup Oats
  • 1 tsp Baking powder
  • 1/4 tsp Cinnamon
  • 1/8 tsp Salt
  • Chocolate Chips
  • Almond Slivers and Pumpkin Seeds (optional)

Preheat over to 350 degrees F and add all ingredients except chocolate chips, almond slivers and pumpkins seeds into a food processor and mix until everything is blended well. Pour batter into a greased miniature crock and mix in chocolate chips. Top with almond slivers and pumpkin seeds and bake for 30 minutes.

Chocolate Almond Butter Baked Oats

This baked oats is for the chocolate lovers. Here is what you need:

  • 1 Mashed Banana
  • 2 Eggs
  • 1/2 cup Oats
  • 1 tsp Baking powder
  • 1 tbs cocoa powder
  • 1/8 tsp Salt
  • 1 tablespoon almond butter
  • chocolate chips

Preheat over to 350 degrees F and add all ingredients except chocolate chips and almond butter into a food processor and mix until everything is blended well. Pour half batter into a greased miniature crock spoon almond butter in the middle of the batter. Add the rest of the batter on top and sprinkle with chocolate chips. Bake for 30 minutes.

Strawberries and Cream Baked Oats

Another delicious baked oats! Check out this delicious recipe:


• 1/2 cup flour
• 1/4 cup oats
• 2 tbs vanilla Greek yogurt
• 1/2 tsp baking powder
• 1 tsp vanilla extract
• 2 tbs sweetener
• 1/2 cup oat milk
• 1 tbs strawberry preserves
• Sliced strawberries

Preheat oven to 375. Combine all ingredients into a food processor except preserves. Put half the batter in a greased miniature crock.
Add preserves in the middle of batter and pour the rest on top. Bake for 30 minutes. Top with strawberries and pour cold milk on top.
